It's possible to hide from them, but they actively search for you once they've seen you. I'm posting this in case anybody is completely stumped and wants a prod (or four) in the right direction. I'm glad that I persevered and kept exploring and thinking it through until I finally managed to get to it. I recently discovered the location of the Crystal Heart in the Mirror Temple and was so stoked when I finally figured it out.
